Tomato Feta Cucumber Salad
Soooo good it almost hurts...this salad that is. This throws together quickly (transports well too) and will be the hit of your next gathering. It also fits well into my healthy eating plan. Nice...
1/2 c. lemon juice
2 T. brown mustard
1 t. salt
1 t. ground black pepper
1/4 c. oil
6 c. sturdy greens - chard, collard, mustard, kale, spinach, chopped with stem
1 lg. onion, red, diced
1 lg. cucumber, diced
2 c. cherry tomatoes, sliced
1 c. feta cheese, crumbled
In a small mixing bowl, whisk together lemon juice, mustard, salt, pepper, and oil - set aside. In a large salad bowl, add sturdy greens, onion, cucumber, tomatoes, feta cheese. Pour dressing over all, toss well to cover all.
