Ingredients: 3 lbs pork shoulder, trimmed of excess fat and cut into chunks. 1 onion, chopped. 3 cloves garlic, minced. 1 cup barbecue sauce. 1 cup chicken broth. 1 tsp smoked paprika. 1 tsp garlic powder. 1 tsp onion powder. Salt and pepper to taste. 1 lb potato gnocchi. 1/4 cup grated Parmesan cheese. Fresh parsley, chopped for garnish.
Instructions: In a slow cooker, combine pork shoulder, onion, garlic, barbecue sauce, chicken broth, smoked paprika, garlic powder, onion powder, salt, and pepper. Cover and cook on low for 8 hours or until pork is tender and easily shreds with a fork. Once pork is cooked, use two forks to shred it in the slow cooker. Cook gnocchi according to package instructions until al dente. Drain and set aside. Add cooked gnocchi to the slow cooker with the pulled pork. Stir gently to combine. Sprinkle Parmesan cheese over the top. Cover and cook for an additional 30 minutes on low until heated through. Serve hot, garnished with chopped parsley. Enjoy!
