Ok, so for over a decade, my family has been adding home-cooked meals we would "put on the menu" at our imaginary restaurant. At this point, it would probably be the longest menu in the country, LOL. However, I whipped up another one that would HAVE to go on the list Simply put, this is zucchini noodle pasta primavera. Sautéed zucchini "noodles," caramelized onions, garlic, tomatoes, artichokes, kalamata olives and a spicy little sauce made out of olive oil and lemon juice. I topped it with some pan-seared chicken tenders and Parmesan. Pine nuts would have been a great addition. YUM.
