Ingredients: 4 tilapia fillets. 1/2 cup grated Parmesan cheese. 2 tablespoons almond flour. 1 teaspoon garlic powder. Salt and pepper to taste. 1 tablespoon olive oil. 1/4 cup heavy cream. 1/2 cup crushed tomatoes. 2 tablespoons chopped fresh basil. 1 clove garlic, minced.
Instructions: Preheat oven to 400F 200C. In a shallow dish, mix together Parmesan cheese, almond flour, garlic powder, salt, and pepper. Pat the tilapia fillets dry with paper towels and coat them evenly with the Parmesan mixture. Heat olive oil in an oven-safe skillet over medium-high heat. Place the tilapia fillets in the skillet and cook for 2-3 minutes per side until golden brown. Transfer the skillet to the preheated oven and bake for an additional 5-7 minutes, or until the tilapia is cooked through and flakes easily with a fork. While the tilapia is baking, prepare the sauce. In a small saucepan, combine heavy cream, crushed tomatoes, chopped basil, and minced garlic. Bring the sauce to a simmer over medium heat, stirring occasionally, until it thickens slightly, about 5 minutes. Serve the Parmesan crusted tilapia hot with the tomato-basil cream sauce spooned over the top.
