Ingredients: 1 cup cooked rice. 2 hard-boiled eggs, chopped. 1/2 cup smoked haddock or any white fish, flaked. 1/2 cup cooked peas. 1/4 cup chopped onions. 2 tablespoons butter. 1 teaspoon curry powder. 1/2 teaspoon cumin. Salt and pepper to taste. Fresh parsley for garnish. Lemon wedges for serving.
Instructions: In a large skillet, melt the butter over medium heat. Add the chopped onions and cook until translucent. Stir in the curry powder and cumin, and cook for another minute until fragrant. Add the flaked fish and cook for a few minutes until heated through. Add the cooked rice, chopped eggs, and cooked peas to the skillet. Stir well to combine all the ingredients. Season with salt and pepper to taste. Cook for an additional 2-3 minutes until everything is heated through. Garnish with fresh parsley and serve with lemon wedges on the side.
