These BBQ Chicken Kabobs are a delightful combination of juicy chicken and colorful vegetables, marinated to perfection and grilled to smoky perfection. They make for a fantastic summer barbecue dish that everyone will love.
Ingredients: 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes. 1/4 cup olive oil. 1/4 cup barbecue sauce. 2 tablespoons soy sauce. 2 cloves garlic, minced. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper adjust to taste. Salt and black pepper to taste. 1 red bell pepper, cut into 1-inch pieces. 1 green bell pepper, cut into 1-inch pieces. 1 red onion, cut into 1-inch pieces. 8 wooden skewers, soaked in water for 30 minutes.
Instructions: To make a marinade, put olive oil, barbecue sauce, soy sauce, minced garlic, paprika, cayenne pepper, salt, and black pepper in a bowl. Put the chicken cubes in a shallow dish or a plastic bag that can be closed again, and pour the marinade over them. Cover or seal and put in the fridge for at least 30 minutes. For better flavor, marinate overnight. Warm up the grill over medium-high heat. Put the chicken that has been marinated, red bell pepper, green bell pepper, and red onion on the soaked wooden skewers one at a time. For extra flavor, brush the skewers with any marinade that's still left over. Put the skewers on the grill and oil the grates so they don't stick. The chicken kabobs should be cooked on the grill for 10 to 15 minutes, turning them over every so often, until the chicken is done and the vegetables are soft and slightly charred. If you want, you can serve it hot with your favorite herbs or extra barbecue sauce on top.
