These vegan black bean enchiladas taste great and are great for a hearty meal during the week. The insides are filled with a tasty mix of black beans, corn, bell pepper, and spices. Enchilada sauce and vegan cheese are then added on top to make the dish filling.
Ingredients: 1 can black beans, drained and rinsed. 1 cup corn kernels. 1 bell pepper, diced. 1 onion, diced. 1 teaspoon cumin. 1 teaspoon chili powder. 1/2 teaspoon garlic powder. 1/4 teaspoon salt. 1 cup enchilada sauce. 8 small corn tortillas. 1 cup vegan cheese, shredded. Fresh cilantro, for garnish.
Instructions: Warm the oven up to 190C 375F. Cook the onion and bell pepper in a skillet until they get soft. Put in salt, cumin, chili powder, garlic powder, black beans, and corn. Bring it to a boil again. Put a little enchilada sauce in the bottom of a baking dish. Put an equal amount of the black bean mixture on each tortilla. Then, roll them up and place them seam-side down in the baking dish. Cover the rolled tortillas with the rest of the enchilada sauce. Put vegan cheese on top of that. Put foil over it and bake for 20 minutes. Take off the foil and bake for five more minutes, or until the cheese melts and the sauce bubbles. Add fresh cilantro as a garnish before serving.
