Layers of thinly sliced potatoes, savory ham, and a creamy, cheesy sauce make this smoky take on the classic au gratin scalloped potatoes. It tastes like BBQ.
Ingredients: 4 large potatoes, thinly sliced. 1 cup diced ham. 1 cup shredded cheddar cheese. 1/2 cup grated Parmesan cheese. 1/4 cup butter, melted. 2 cloves garlic, minced. 2 cups heavy cream. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/2 teaspoon smoked paprika. 1/2 teaspoon dried thyme. 1/4 teaspoon cayenne pepper optional.
Instructions: Preheat your BBQ grill to medium-high heat. In a large bowl, combine the sliced potatoes, diced ham, cheddar cheese, Parmesan cheese, melted butter, and minced garlic. In a separate bowl, whisk together the heavy cream, salt, black pepper, smoked paprika, dried thyme, and cayenne pepper if using. Pour the cream mixture over the potato mixture and toss to coat evenly. Place a large sheet of heavy-duty aluminum foil on the grill grates and transfer the potato mixture onto the foil, spreading it out evenly. Cover the grill and cook for 40-45 minutes or until the potatoes are tender, checking and stirring occasionally. Once the potatoes are cooked through and golden brown, remove from the grill and let it rest for a few minutes before serving.
