This BBQ watermelon Greek salad is a fun take on the traditional Greek salad. It's full of summery flavors. To make the watermelon taste even better, grill it. The sweet smoke flavor goes well with the salty feta cheese and sour balsamic vinegar.
Ingredients: 1 small seedless watermelon, sliced into thick wedges. 1 cup cherry tomatoes, halved. 1 cucumber, diced. 1/2 cup crumbled feta cheese. 1/4 cup black olives, sliced. 1/4 cup red onion, thinly sliced. 1/4 cup fresh mint leaves, chopped. 2 tablespoons extra virgin olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: Warm up the grill over medium-high heat. For two to three minutes on each side, grill the watermelon wedges until grill marks show up. Take the watermelon off the grill and let it cool down a bit. Put the watermelon cubes in a large bowl. In the same bowl as the watermelon, put in the cucumber, black olives, red onion, mint leaves, and cherry tomatoes. Add olive oil and balsamic vinegar to the salad and mix them together. Add pepper and salt to taste. Toss everything together gently until it's all well mixed. Serve right away or put in the fridge until you're ready to serve.
