Ingredients: 200g almond flour. 200g powdered sugar. 150g egg whites aged. 50g granulated sugar. 1/4 tsp cream of tartar. Gel food coloring optional. Flavor extracts e.g., vanilla, almond, or raspberry.
Instructions: Preheat your oven to 300F 150C and line baking sheets with parchment paper. In a food processor, combine almond flour and powdered sugar. Pulse until fine and well mixed. Sift the mixture into a large mixing bowl. In a separate bowl, beat the aged egg whites with cream of tartar until they form soft peaks. Gradually add granulated sugar and beat until stiff, glossy peaks form. If desired, add gel food coloring and flavor extracts to the meringue mixture and gently fold until evenly colored and flavored. Carefully fold the almond flour and powdered sugar mixture into the meringue in two or three additions. The batter should be smooth and flow like lava. Transfer the batter into a piping bag fitted with a round tip and pipe small circles onto the prepared baking sheets, leaving space between each one. Tap the baking sheets on the counter a few times to release air bubbles and flatten the macarons. Let the macarons rest for about 30 minutes to form a skin. They should not stick to your fingers when lightly touched. Bake in the preheated oven for 15-18 minutes or until the macarons have developed feet and are set. Once cooled, fill the macarons with your favorite filling, such as ganache or buttercream, and sandwich them together.
