When setting out to modify any menu there's always something that gets the ball rolling. This summer GM and Barmaster Pierre was inspired by Violette. With Violette it's all about the aroma; floral, sweet and smooth. A liqueur made from the infusions of violet flowers and extracts of violet leaves.
