Instructions: For the cookies: In a bowl, whisk together flour and salt. In another bowl, cream butter and sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients and mix until a dough forms. Divide the dough in half and shape into discs. Wrap in plastic and chill for at least 1 hour. Preheat oven to 350F 175C and line baking sheets with parchment paper. Roll out the dough and cut into beach-themed shapes. Place on the baking sheets and chill for 15 minutes. Bake for 10-12 minutes or until edges are lightly golden. Let cool on the sheets for a few minutes before transferring to a wire rack to cool completely. For the royal icing: In a bowl, whisk together confectioners' sugar, egg whites, and lemon juice until smooth. Divide into bowls and color with food coloring as desired. Transfer icings to piping bags with small tips. To decorate: Outline cookie shapes with tan icing to create sandy areas. Fill in the sandy areas with tan icing and immediately sprinkle with edible sanding sugar. Use blue and green icing to create waves and ocean areas. Add seashell and pearl decorations onto the wet icing. Let the icing set before serving or packaging.
