A hearty vegan dish combining tender white beans with flavorful turnips and mixed greens, baked to perfection. Nutritional yeast adds a cheesy flavor, while breadcrumbs provide a crispy topping.
Ingredients: 1 cup dried white beans, soaked overnight. 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 2 cups chopped turnips. 4 cups chopped mixed greens such as kale, chard, spinach. 1 teaspoon dried thyme. 1 teaspoon paprika. Salt and pepper to taste. 2 cups vegetable broth. 1/4 cup nutritional yeast. 1/4 cup breadcrumbs.
Instructions: Preheat oven to 375F 190C. In a large skillet, heat olive oil over medium heat. Add onion and garlic, saut until translucent. Add turnips, mixed greens, thyme, paprika, salt, and pepper. Cook until greens are wilted. In a large baking dish, combine soaked beans and cooked vegetable mixture. Pour vegetable broth over the mixture and stir in nutritional yeast. Cover with foil and bake for 45 minutes. Remove foil, sprinkle breadcrumbs over the top, and bake uncovered for an additional 15 minutes or until breadcrumbs are golden brown. Serve hot and enjoy!
