The roasted Brussels sprouts, hearty kale, and sweet and sour balsamic dressing in this Roasted Brussels Sprouts and Kale Salad go so well together. This salad is tasty and good for you, and it goes well with any meal.
Ingredients: 1 lb Brussels sprouts, trimmed and halved. 1 bunch kale, stems removed and leaves torn into bite-sized pieces. 2 tablespoons olive oil. Salt and pepper to taste. 1/2 cup dried cranberries. 1/4 cup chopped pecans. 1/4 cup crumbled feta cheese. For the dressing:. 3 tablespoons balsamic vinegar. 2 tablespoons olive oil. 1 tablespoon honey. 1 teaspoon Dijon mustard. Salt and pepper to taste.
Instructions: Start by heating the oven to 400F 200C. Salt and pepper the Brussels sprouts and add 2 tablespoons of olive oil to a large bowl. Toss the sprouts to coat them. After putting the Brussels sprouts on a baking sheet, roast them in a hot oven for 20 to 25 minutes, or until they are soft and slightly caramelized. To make sure they cook evenly, flip them over halfway through. Set the dressing aside while the Brussels sprouts roast. Add 2 tablespoons of olive oil, honey, Dijon mustard, salt, and pepper to a small bowl. Use a whisk to mix the ingredients together. Put away. Put the torn kale leaves in a different large salad bowl. Get the Brussels sprouts out of the oven when they're done and let them cool for a while. Throw in the roasted Brussels sprouts, dried cranberries, chopped pecans, and feta cheese that has been broken up. Add the ready-made dressing to the salad and mix everything together until it's well covered. Roasted Brussels sprouts and kale salad can be eaten right away as a side dish or as a light meal.
