A tasty and refreshing salad with shrimp marinated in tequila and lime juice served on top of quinoa, mixed greens, and colorful vegetables.
Ingredients: 1 cup quinoa, rinsed and cooked. 1 lb large shrimp, peeled and deveined. 3 tbsp tequila. 2 limes, juiced. 3 tbsp olive oil. 2 cloves garlic, minced. 1 tsp cumin powder. Salt and pepper to taste. 1 cup cherry tomatoes, halved. 1/2 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 2 cups mixed greens. Avocado slices for garnish.
Instructions: Marinate shrimp in a mixture of tequila, lime juice, olive oil, minced garlic, cumin powder, salt, and pepper for 30 minutes. Heat a skillet over medium-high heat and cook marinated shrimp until pink and opaque, about 2-3 minutes per side. In a large bowl, combine cooked quinoa, cherry tomatoes, red onion, and fresh cilantro. Add the cooked shrimp to the quinoa mixture and toss gently to combine. In a small bowl, whisk together the remaining marinade and drizzle it over the salad. Serve the salad over a bed of mixed greens and garnish with avocado slices.
