A hearty and flavorful stew packed with three varieties of beans, vegetables, and spices. Perfect for a cozy meal.
Ingredients: 1 can 15 ounces black beans, drained and rinsed. 1 can 15 ounces kidney beans, drained and rinsed. 1 can 15 ounces chickpeas, drained and rinsed. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 can 14.5 ounces diced tomatoes. 2 cups vegetable broth. 1 teaspoon cumin. 1 teaspoon paprika. 1/2 teaspoon chili powder. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a slow cooker, combine all the ingredients. Stir well to combine. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the flavors have melded. Taste and adjust seasoning if necessary before serving.
