Catching bees is damn hard so here's what you do. When you shake those fuckers out of a tree, run a bit north so they're off screen. Next open your inventory, the bees will freeze while you're in there. equip your net by doin so you will face south which is the direction the bees will come from once you close your inventory. Have your net at the ready by holding the button. Once they're on screen and swing your net before they sting you and voila!
