Flagship Reserve (Beecher’s Handmade Cheese)
A super sweet and mellow cheddar, the producer, Beecher’s, makes a couple other varities. They make a raw milk Flagship and also a Flagsheep, which is made with added sheep’s milk.
Milk: pasteurized/raw cow
Location: Seattle, Washington
Texture: firm, crumbly yet creamy on the palate
Age: over 1 year
Flavor: definitely notes of brown butter, sweet caramel, earthy grassy notes. A more mellow cheddar.
Notes: Beecher’s only takes certain left over curds from Flagship, the sister cheese, and then creates Flagship Reserve, wrapping it in cloth and open-air aging it longer.
Accompaniments: Whatever you have lying around, would compliment this cheese. If you got some loose grapes or pears… an open bottle of wine. It would go great in cornbread even!
