Tonight's delight: the Crock Pot bhuna and some easy saag aloo!
On the side: some Patak's lime pickle, and onion and tomato raita with a little toasted cumin and no coriander/cilantro because my partner can't stand it. And just some plain Basmati rice cooked with a little salt and butter.
For the spinach, I used the leftover half a 400g/14 oz.) can of chopped tomatoes from the bhuna, and less potato than called for as a nod to my blood sugar. I also couldn't resist subbing about 1.5 tsp. of (premade) panch phoron for the cumin seeds.
Everything turned out yummy--which is probably an extra good thing, considering how much of it there is! Probably eating leftovers tomorrow, on my own for supper.
