Ingredients: 1 cup beer. 2 tablespoons ancho chili powder. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon dried oregano. 1 teaspoon salt. 1/2 teaspoon black pepper. 2 pounds lamb, cubed.
Instructions: In a bowl, mix together beer, ancho chili powder, olive oil, minced garlic, ground cumin, dried oregano, salt, and black pepper. Add cubed lamb to the marinade, making sure all pieces are coated. Cover and refrigerate for at least 4 hours or overnight. Preheat grill to medium-high heat. Remove lamb from marinade and thread onto skewers. Grill lamb skewers for about 10-12 minutes, turning occasionally, until desired doneness is reached.
