This is my second year of making some traditional sweet treats for Epiphany (I don't celebrate it, but it's a good excuse to bake). I tried my hand a focaccia della Belfana this year as the main bread, which cake out nice, but because I didn't have the right flour, I needed to improvise with a recipe that used plain flour only. Furthermore, the radiators in my house, which usually help in the proofing process, were cold and needed repairs to actually have heat. I, in vain, tried to proof the dough over several days, before growing tired of waiting and making the bread as best as I could with the dough which hadn't risen by much. I will buy Manitoba flour to make it again much more accurately and at least the radiators are fixed to help the bread proof properly now. I managed to get a better recipe for Befanini that I might even use out of season.

I made galette de rois and befanini for epiphany (my family doesn't actually celebrate it, it was more of an excuse to make these treats). I learned the lesson of not scoring so deep in puff pastry, but it still came out pretty good.
