A hearty and healthy way to start the day is with this Sweet Potato Hash Breakfast Skillet. The breakfast is filling and tastes great because it has sweet potatoes, bell peppers, and perfectly cooked eggs.
Ingredients: 2 medium sweet potatoes, peeled and diced. 1/2 onion, chopped. 1 red bell pepper, diced. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper adjust to taste. Salt and pepper to taste. 4 eggs. Fresh parsley for garnish optional.
Instructions: Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and garlic, and saut for 2-3 minutes until they start to soften. Add the diced sweet potatoes, red bell pepper, paprika, cayenne pepper, salt, and pepper to the skillet. Stir well to combine. Cover the skillet with a lid and let the mixture cook for about 10-15 minutes, stirring occasionally, until the sweet potatoes are tender and browned. Create 4 wells in the sweet potato mixture and crack an egg into each well. Cover the skillet again and cook for an additional 5-7 minutes, or until the egg whites are set but the yolks are still runny adjust cooking time to your egg preference. Garnish with fresh parsley, if desired. Serve hot, directly from the skillet, and enjoy your delicious sweet potato hash breakfast!
