This Panera Broccoli Cheese Soup made in a slow cooker is creamy, warm, and full of cheese. Wonderful for a cozy night in!
Ingredients: 1 lb broccoli florets. 1 cup shredded carrots. 1/2 cup diced onion. 2 cloves garlic, minced. 4 cups chicken broth. 1/2 teaspoon salt. 1/2 teaspoon black pepper. 1/4 teaspoon paprika. 1/4 cup unsalted butter. 1/4 cup all-purpose flour. 2 cups half-and-half. 2 cups shredded sharp cheddar cheese.
Instructions: Place broccoli, carrots, onion, garlic, chicken broth, salt, pepper, and paprika into the slow cooker. Cover and cook on low for 4-5 hours or until vegetables are tender. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes, stirring constantly. Gradually whisk in half-and-half until smooth and thickened, about 4-5 minutes. Stir in shredded cheese until melted and smooth. Pour cheese mixture into the slow cooker and stir to combine. Cover and cook on low for an additional 30 minutes, stirring occasionally. Serve hot and enjoy!
