Thanksgiving is the symbol of fall. Fall foods, tastes and colors.
Easter, particularly Greek Easter, is the beginning of the spring and summer. Fresh cheeses, fresh salads, fresh flavors. Dill, mint and parsley.
It looks like I cheated but we have a local grower of hydroponic tomatoes, Parson's Homegrown. When you cannot wait for a tomato, this will do. I will not buy the tomatoes from hundreds of miles away, grown in the desert. But, until, mine come in, Parson's is the way to go.
Of course the lamb was splendid. Three ways with lamb, keftes, roasted and slow roasted with five heads of garlic. Thank you Williams Ranches.
Fresh ricotta with a bit of olive oil. Nothing more. Bellwether Farms fresh Jersey Cow Ricotta is sublime. Eat it as a starter, or have it for breakfast with some honey, or fresh fruit on a great slice of bread.
Together all the flavors of spring. The promise of the coming growing season.
