These Frozen Yogurt Berry Bars are a delightful and refreshing treat, perfect for a hot summer day or any time you're craving something sweet and tangy. The combination of creamy Greek style vegan yogurt, sweet maple syrup, and juicy mixed berries is simply irresistible. Plus, the addition of crushed graham crackers or oats adds a delicious crunch to every bite!
Ingredients: 2 cups Greek style vegan yogurt. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1 cup mixed berries such as strawberries, blueberries, raspberries. 1/4 cup crushed graham crackers or oats. 1/4 cup chopped nuts optional, for added crunch.
Instructions: In a bowl, mix together Greek style vegan yogurt, maple syrup, and vanilla extract until well combined. Line a baking dish with parchment paper. Spread half of the yogurt mixture evenly into the bottom of the dish. Sprinkle half of the mixed berries over the yogurt layer. Sprinkle half of the crushed graham crackers or oats over the berries. Repeat layers with the remaining yogurt mixture, berries, and crushed graham crackers or oats. If using, sprinkle chopped nuts over the top layer for added crunch. Cover the dish with plastic wrap and freeze for at least 4 hours, or until firm. Once frozen, lift the bars out of the dish using the parchment paper and cut into squares or bars. Serve immediately, or store in an airtight container in the freezer.
