This Mediterranean Couscous Salad is a healthy and refreshing dish that tastes like it came from the Mediterranean. You can eat it for lunch or as a side dish for dinner. This salad is a hit with everyone because it has couscous, fresh vegetables, olives, feta cheese, and a zesty lemon-oregano dressing.
Ingredients: 1 cup couscous. 1 1/4 cups water. 1 cup cherry tomatoes, halved. 1/2 cucumber, diced. 1/2 red onion, finely chopped. 1/4 cup Kalamata olives, pitted and sliced. 1/4 cup feta cheese, crumbled. 1/4 cup fresh parsley, chopped. 3 tablespoons olive oil. 2 tablespoons lemon juice. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Bring 1 1/4 cups of water to a boil in a medium-sized saucepan. Cover and take the pot off the heat. Add 1 cup of couscous and mix it in. After 5 minutes, use a fork to fluff it up. Move the couscous to a big bowl and let it cool down until it's room temperature. In the same bowl as the couscous, put in the cucumber, red onion, feta cheese, fresh parsley, and cherry tomatoes. Add the lemon juice, dried oregano, salt, and pepper to a different small bowl and mix them together using a whisk. Add the dressing to the salad and mix everything together until it's well mixed. Put it in the fridge for at least 30 minutes before serving so the flavors can mix. If you want, you can serve it cold and top it with extra fresh parsley.
