Old Fashioned Banana Pudding
One of my most cherished memories is watching my grandmother make homemade banana pudding on the stove top for “dinner on the ground” at church. I have tried to replicate this recipe for over 30 years and finally found one that came pretty close..then I modified it to make it my own. Every bite brings back memories. I’ve made this for several social social events and always hear, “This is the best banana pudding I’ve ever eaten!”
CUSTARD INGREDIENTS
1/2 cup sugar
2 tablespoons flour
1/4 teaspoon salt
2 cups milk
4 eggs (separated)
1 tablespoon vanilla flavoring
1 box Vanilla Wafers
4 medium sized ripe bananas (brown spotted ones are the best)
CUSTARD DIRECTIONS: Line bottom of baking dish with vanilla wafers and slice bananas over the top. Set aside (I put mine in the fridge). Separate egg yolks from whites and place into two bowls. Mix flour, salt, and sugar in a medium sized pot. Add milk slowly. Stir constantly over low heat until thickened. Beat egg yolks in bowl, then pour them slowly into pot, stirring constantly. Once incorporated, cook for 5 minutes, stirring constantly. Remove from heat and add vanilla. Pour over bananas. Note: You can add additional layers of wafers and bananas in between, but I prefer to have only a bottom layer of cookies.
Start oven preheating to 450 degrees.
MERINGUE INGREDIENTS
4 egg whites (reserved from above)
1/4 cup sugar
1/4 tsp cream of tarter (optional)
MERINGUE DIRECTIONS: Beat egg whites and 1/4 cup sugar until stiff peaks form. Spread on top of custard and bake for about 5 minutes (or until browned). Remove from oven and serve warm. (Can be refrigerated once it comes to room temperature and served later. I place toothpicks in mine to keep the plastic or foil from sticking to the top of the meringue.)
