The Perfect Risotto
In the past years I have developed my cooking skills a lot. I have made dishes with chicken, with veggies or with some beautiful salmon. With Christmas I am normally the head chef and I wouldn’t had it any other way. But there is this one dish, one I like the eat and cook everyday if I had the chance. This dish is Risotto. Delicious and well-filling, but what makes it so special?
Risotto is a dish with rice. You have to cook it slowly and with delicacy. The simple way is to start with a cut onion, bake this beautiful shiny. Then add the amount of risotto you need. Keep in mind that it is a lot more when it is cooked. Bake the risotto 30 seconds with the onion then add some boiled vegetable broth. Use as much until the rice is just flooded. no more, no less. Spoon the broth lightly through, so the rice doesn't curdle. put a lid on the pan and let it boil for a few minutes. When you see that the broth is running out, you put some more in and spoon this as well. you repeat this until the rice is al dente. At the end you put some salt and pepper on top to season the dish.
This is the normal way to prepare it. My way ends a little bit differently. When the rice is almost al dente I put in an certain amount of butter. You melt this butter and then spoon it through the boiled rice. This make the dish a bit smoother. Also I add some parmesan to give the risotto an extra bite. The more parmesan you add, the more bite the dish gets. tip: taste before you throw in too much. These extra ingredients make this dish my favourite.
But, of course, just the rice isn't enough for a nice dish. Also other products have to be added. My sister is a vegetarian, so we like to eat this dish with mushrooms and delicious green asparagus. If you would like a dish with fish/meat, then chicken or (smoked) salmon is also highly recommended!
