I moved from New York City to a vineyard in Southern France and somehow ended up learning that the secret to a great omelet is... waiting until tomorrow to eat it. 😂 Tonight's dinner: a traditional Provençal onion omelet made with 12 onions, farm-fresh eggs, and a healthy dose of French patience.
