Pesto and Pea Tortellini Soup
So I made this Pesto and Pea Tortellini Soup last night and I'm really excited about it. It's from the blog Bev Cooks. Her blog is hilarious, so you should be reading it, and you should also be following her on instagram to see her super-cute twins and read the funny captions on her pictures of them. Trust me.
This was so delicious and so easy to make that I should probably make it once a week. Seriously. The night before we made it, we pulled our bag of veggie scraps out of the freezer and made a vegetable stock, so that took care of our "stock" situation in this recipe. Last night all we had to do was reheat the stock, add pesto, frozen peas, tortellini, and we also threw in some frozen corn. Then we waited about 5-10 minutes until it was heated through. Does it get any easier than that?
Bev's recipe calls for you to make a kale pesto (and that won't take long either), but you could obviously use a store-bought pesto or a pesto you've made ahead of time. We used some parsley and chive pesto I had made recently (recipe coming soon to the "real" blog). As for the tortellini, we used a mix of sweet italian sausage tortellini and three-cheese tortellini. Like I said, it was super good. I can't wait for leftovers tonight.
