I made cricket banana bread muffins! I used the cricket meal that we baked the other day and replaced a 1/4 cup of the 1.5 cups of flour the recipe called for. Turned out delicious! 4 over ripe bananas 3/4 cup white sugar 1 tsp vanilla extract 1 egg 3/4 cup melted butter 1 tsp baking soda Pinch of salt 1 1/4 cups flour 1/4 cup cricket meal Spices to taste -cinnamon nutmeg cloves (and I usually also add a dash of cayenne pepper, just for a little zing) Mix it all together adding the baking soda, flour, cricket meal, and salt last.
