These Bacon Barbacoa Cups are a delicious and savory appetizer that will be a hit at your Big Game party. They're made with crispy bacon, seasoned ground beef, and a cheesy, spicy filling all nestled in a biscuit cup. Easy to make and even easier to enjoy!
Ingredients: 1 pound bacon strips. 1 pound ground beef. 1 onion, finely chopped. 2 cloves garlic, minced. 1 can 14 ounces diced tomatoes. 1 can 4 ounces green chilies, chopped. 2 teaspoons chili powder. 1 teaspoon cumin. Salt and pepper to taste. 1 cup shredded cheddar cheese. 1 package refrigerated biscuit dough. Sour cream and chopped cilantro for garnish.
Instructions: Set the oven temperature to 375F 190C. Cook the bacon in a big skillet until it's crispy. Take it out of the skillet, break it up, and reserve. Add the ground beef to the same skillet and cook it until browned. Remove any extra fat. Toss in the minced garlic and onion with the ground beef in the skillet. Cook the onion until it becomes transparent and soft. Add the chopped tomatoes, green chilies, cumin, chili powder, salt, and pepper and stir. Simmer the mixture until it thickens, about 5 to 7 minutes. Press each biscuit dough ball into a cup-shaped, greased muffin tin. Fill each biscuit cup with the beef and tomato mixture using a spoon. Add some crumbled bacon and shredded cheddar cheese to the top of each cup. Bake for 12 to 15 minutes, or until the cheese has melted and the biscuit cups are golden brown, in a preheated oven. Take them out of the oven and allow them to cool a little. Add some chopped cilantro and sour cream as garnish. Serve your Bacon Barbacoa Cups as the ideal pregame snack!
