Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp salt. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/2 cup milk. 1/4 cup unsalted butter, melted. 1/4 cup plain Greek yogurt. 1 tsp vanilla extract. 2 large eggs. For the coating:. 1/2 cup unsalted butter, melted. 1/2 cup granulated sugar. 1 tsp ground cinnamon.
Instructions: Warm the oven up to 350F 175C and grease or line a mini muffin tin with muffin liners. Put the flour, sugar, baking powder, salt, cinnamon, and nutmeg in a large bowl and mix them together. Beat the eggs, milk, melted butter, and vanilla extract together in a different bowl. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Fill up each mini muffin tin hole about two thirds of the way to the top with muffin batter. Put the muffins in an oven that has already been heated for 10 to 12 minutes, or until a toothpick inserted into one comes out clean. Put the sugar and cinnamon in a shallow bowl and mix them together while the muffins are baking. After the muffins are done, leave them in the pan for a few minutes to cool down a bit. After dipping each muffin in the melted butter, roll it in the cinnamon-sugar mix to cover it all the way around. Put the muffins on a wire rack to cool all the way down.
