Got around to finally visiting Billy’s Bakery in Chelsea, which had been on my to-visit list for awhile. The bakery is mainly known for its cupcakes, but has a plentiful range of other baked goods like cake, cheesecakes, cookies, and so on. The bakery interior was cute, charming, and the perfect place to grab a nice slice of cake with coffee on a cold winter’s day like the day I went. I was most interested in trying their cake slices, so I got a slice of the Lemon Raspberry cake (made with vanilla cake filled with raspberry jam and lemon frosting, then iced with lemon frosting and garnished with dallops of raspberry jam) and a slice of the Crowd Please cake (made with alternating layers of chocolate and vanilla cake filled with alternating layers of chocolate and vanilla frosting). Both were fluffy, scrumptious, and divine, and I really appreciated how neither cakes were too heavy frosting-wise. The cake slices were both $6.50 each, but really not that bad compared to other places I’ve been to like Harbs the next block over where their cake slices can range anywhere from $7 to $11. Definitely see myself coming back here if I’m ever in the area again.

Sweet Treats in Chelsea

Doughnut Plant This Lower East Side legend recently set up shop in Chelsea, making its famous donuts—hand-made daily—more accessible for obsessed New Yorkers. (There are also locations in Tokyo and Seoul.) There are not your grandmother's donuts. Flavors range from cashew and orange blossom to peanut-butter-and-banana-cream filled to matcha green tea. 220 West 23rd St.; doughnutplant.com Billy's Bakery Sure, you could go to Magnolia's Bakery and Crumbs—but neither one holds a candle to the cupcakes at this cozy bakery. The best ones are the simplest: yellow cake or chocolate with vanilla or chocolate buttercream frosting. If you're feeling more adventurous, specials can include nutella, chai, and maple pecan. 184 Ninth Ave.; billysbakerynyc.com La Maison du Macaron These might not be the best macarons in town (you'll need to make your way to Ladurée on the Upper East Side for that, where they're shipped in from Paris), but the rainbow-colored, meringue-based treats here still do the trick. Billy's Vanilla, Vanilla Cupcakes

Yield: Makes about 30 cupcakes

INGREDIENTS

1 3/4 cups cake flour, not self-rising 1 1/4 cups unbleached all-purpose flour 2 cups sugar 1 tablespoon baking powder 3/4 teaspoon salt 1 cup (2 sticks) unsalted butter, cut into 1-inch cubes 4 large eggs 1 cup whole milk 1 teaspoon pure vanilla extract Basic Vanilla Buttercream Colored sprinkles, for decorating, optional

DIRECTIONS

Preheat oven to 325 degrees. Line cupcake pans with paper liners; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine flours, sugar, baking powder, and salt; mix on low speed until combined. Add butter, mixing until just coated with flour.

In a large glass measuring cup, whisk together eggs, milk, and vanilla. With mixer on medium speed, add wet ingredients in 3 parts, scraping down sides of bowl before each addition; beat until ingredients are incorporated but do not overbeat.

Divide batter evenly among liners, filling about 2/3 full. Bake, rotating pan halfway through, until a cake tester inserted in the center comes out clean, 17 to 20 minutes.

Transfer to a wire rack to cool completely. Repeat process with remaining batter. Once cupcakes have cooled, use a small offset spatula to frost tops of each cupcake. Decorate with sprinkles, if desired. Serve at room temperature.
