These vegan black bean mole burgers are packed with flavor and protein. The combination of black beans, quinoa, and a rich mole-inspired seasoning blend creates a satisfying and hearty burger alternative.
Ingredients: 2 cans 15 oz each black beans, drained and rinsed. 1 small onion, finely chopped. 3 cloves garlic, minced. 1 bell pepper, diced. 1 cup cooked quinoa. 2 tablespoons tomato paste. 2 tablespoons cocoa powder. 1 tablespoon ground cumin. 1 teaspoon smoked paprika. 1 teaspoon chili powder. 1 teaspoon dried oregano. Salt and pepper to taste. Burger buns and desired toppings.
Instructions: In a large mixing bowl, mash the black beans until mostly smooth. Add in the chopped onion, minced garlic, diced bell pepper, cooked quinoa, tomato paste, cocoa powder, cumin, smoked paprika, chili powder, oregano, salt, and pepper. Mix until well combined. Form the mixture into burger patties of desired size. Heat a skillet over medium heat and lightly oil the surface. Cook the burger patties for about 4-5 minutes on each side, or until golden brown and heated through. Serve the black bean mole burgers on burger buns with your favorite toppings.
