While it’s fine to headcanon Yuuri as bi, it’s not more valid than headcanoning him as gay as the only person he’s shown to be romantically and sexually attracted to in the series is Victor, a man. This is canon. Bi erasure is a real thing, but it 300% doesn’t apply to Yuuri Katsuki.  

Keep in mind that the original Japanese used gender neutral terms like 'lover’ and crunchyroll decided to translate it as ‘girlfriend’ in early episodes, which could give the illusion Victor was asking Yuuri about girlfriends when he was not. There was quite a bit of controversy over this mistranslations early on in fandom.

I suspect that some writers who use “wind knocked out” so flippantly don’t know the specific phenomenon it’s supposed to refer to and think it’s just like, a turn of phrase, and that then encourages other writers to do and think the same.
