BLUE CHEESE BACON DIP
Ingredients:
¾ cup chopped bacon (roughly 6 slices)
12 ounces (1½ sticks) cream cheese
½ cup sour cream
½ tsp. garlic powder
Splash or two of almond milk
¾ cup blue cheese crumbles
1½ tablespoons chopped fresh chives
Directions:
Preheat oven to 400 F.
Line a baking sheet with foil and place a cooling rack on top of the baking sheet. Lay 6 slices of bacon onto the cooling rack.
Bake bacon in the oven for roughly 15 - 20 minutes until golden brown and slightly crisp. Once out of the oven, pat the bacon dry with a paper towel and chop into small pieces.
While bacon is baking, combine cream cheese and sour cream in a medium sized bowl. Mix together with a hand mixer.
Add in garlic powder and mix. Then add in almond milk to thin it out just a bit, mixing until combined.
Carefully fold in blue cheese crumbles, chopped bacon, and chives.
Divide the dip between two 6” ramekins, or the serving dish of your choice. Bake in the oven for 10 - 15 minutes, until golden on top and bubbly. Serve with chips!

As you can probably tell, I’m a big fan of dips here on the Little Dixie Cook. :) Anything creamy that you can stick a chip into and I’m all about it. This particular dip is rich with a nice salty kick... my husband says you can never go wrong with blue cheese and bacon! Be sure to make it for your next get together!!
