Bolognaise Sauce – “Ragù alla Bolognese”
Ingredients:
1 beef diaphragm
250 g. pancetta (or half the diaphragm weight)
1 celery stem
1 onion
2 carrots
500 g. tomato sauce
1 or 2 glasses of milk
Water
Salt
Grind the pancetta and put it as first in the saucepan.
