So, @marques_ang shared some fun facts about the duck eggs he gave me from his ranch. Some are Duck Eggs and some are Muscovy Duck Eggs. While the differences are subtle, I suspect these are probably it. The Muscovy Eggs are larger, with brilliant yolks that have a nice smoothness to them. Today, I scrambled the eggs with Heavy Whipping Cream and served them over a bed of Radicchio with Sautéed Shrimp.
