These Boozy Beef and Butternut Tacos are a delightful fusion of flavors, combining tender beef, sweet butternut squash, and a hint of bourbon for a unique twist. Topped with fresh avocado, crunchy cabbage, and zesty lime, they're sure to be a hit at your next taco night!
Ingredients: 1 lb beef chuck roast, thinly sliced. 2 cups butternut squash, diced. 1 onion, thinly sliced. 3 cloves garlic, minced. 1 jalapeno, seeded and diced. 1/2 cup beef broth. 1/4 cup bourbon. 2 tablespoons tomato paste. 1 tablespoon chili powder. 1 teaspoon ground cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. 8 small flour tortillas. Toppings: avocado slices, shredded cabbage, chopped cilantro, lime wedges.
Instructions: Brown the beef slices in small amounts in a large skillet over medium-high heat. Put away. Put the chopped onion, garlic, jalapeo, and butternut squash in the same pan. About 5 minutes of cooking will soften the food. Put the beef back in the pan. Add tomato paste, chili powder, cumin, smoked paprika, salt, and pepper, and mix them in. Lower the heat and cook until the sauce gets thicker and the beef is soft, about 15 to 20 minutes. You can use a different pan or the microwave to warm up the tortillas. Spoon some of the beef and butternut squash mixture onto each tortilla to make tacos. Place slices of avocado, shreds of cabbage, and chopped cilantro on top. Put lime wedges on the side and serve.
