Another cool guy I met last year was Mark Scott. When I arrived @conveniencewest_bbq I didn't know what or whom to expect. I just heard the food was really good! Mark made me feel at home and welcome to take pics and videos of the operation. It was amazing how the little town of Marfa sprang to life as he was getting ready to open his doors. Locals and travelers from afar were all in line enjoying the music and each other's company. Marfa is a different and eclectic place but the people there are as welcoming as I've ever witnessed. Mark is definitely that way too. Their BBQ is innovative and their sides are taken to another level because they're out of the box takes like sweet potato salad or helote salad are just so different than you'd get at most other places.
