Make these CHOC CHIP COOKIE BARS for a healthy, protein-packed snack! The secret ingredient is @BotanikaBlends Protein Powder, I used the Vanilla Cake Batter flavour which is my absolute fave atm. 🙌 Look at how fluffy they are 😍 SAVE THIS RECIPE👇 Ingredients * 2 tbsp ground flax seeds soaked in 1/3 cup water * 1/3 cup unsweetened applesauce * 1/2 cup coconut sugar * 1/4 cup almond butter * 1 tsp pure vanilla extract * 1 cup oat flour (rolled oats blended into flour) * 1/4 cup @BotanikaBlends Vanilla Cake Batter Protein Powder * 1/2 cup white spelt flour or GF flour * 1 tsp cinnamon * 1/2 tsp baking powder * 1/4 tsp baking soda * 1/4 tsp salt * 1/4 cup vegan dark chocolate chips * Optional mix-ins: 1/3 cup diced dried apricots and 1/4 cup chopped almonds * 1 1/2 tbsp unsweetened coconut shreds Method * Preheat oven to 175°C/350°F. Line an 8x8x2 inch baking dish with baking paper and set aside. * In a large mixing bowl, whisk together the flax eggs, applesauce, coconut sugar, almond butter, and vanilla. Set aside. * Whisk together the protein powder, oats, flour, cinnamon, baking powder, baking soda and salt. Combine in the mixing bowl with the liquid ingredients. * Stir in the choc chips, and apricots and almonds if using. Pour the mixture into the baking dish and use the back of a spoon or your hands to evenly spread it out to the edges of the dish.
