Will we ever see the first time Iroh meet baby Kaito? Or how it was decided he'd be called grandpa?

This a lovely idea and yes, I have a WIP for this! Its placeholder title is called line to walk and it features Iroh meeting Kai when he's about seven days old and some Iroh/Katara bonding.
In case it takes me a long time to get this one published though, I'll answer the question on its own. I was actually kind of torn over what the steambabies would call Iroh for a long time, purely because Great-Uncle Iroh would also sound super cute. But I figure it's something Zuko would think about a lot over the course of the Katara's first pregnancy. He would want Iroh to be there in the capacity of a grandfather and knows that Iroh would want to be, too. In that case, and since he was robbed of the chance to have grandchildren of his own by Lu Ten, Zuko asks if Kai and the other steambabies yet to come can call Grandpa.
Iroh says yes, of course.
