Chattanooga Whiskey Co. 1816 Reserve. Tasting notes: This is a smooth bourbon. The yeasts used in the distillation process are the types more often used in brewing ales rather than whiskey. This gives it a pleasant aroma. It has notes of vanilla and caramel on the front. While the background flavors are a combination of allspice with a hint of anise. My Father, who has a preference for Rye Whiskey, noted that this bourbon has a finish similar to that of a good Rye. Being only 90 proof, it blends into cocktails excellently. However, the light and spicy character of this bourbon is more than capable of standing on it's own when enjoyed neat.
