Ingredients: 4 boneless, skinless chicken breasts. 1 package 5.2 ounces Boursin cheese garlic and herb flavor. 1 cup baby spinach leaves. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Preheat oven to 375F 190C. Using a sharp knife, cut a pocket horizontally into each chicken breast. Season the inside of each pocket with salt and pepper. Stuff each chicken breast pocket with Boursin cheese and baby spinach leaves. Secure the pockets with toothpicks to prevent filling from leaking out. Heat olive oil in an oven-safe skillet over medium-high heat. Add stuffed chicken breasts to the skillet and sear for 2-3 minutes on each side until golden brown. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until chicken is cooked through and reaches an internal temperature of 165F 74C. Remove toothpicks before serving.
