Chops and smoked chicken A hearty and tasty salad called panzanella combines the smokey flavor of chicken with the heat of chorizo sausage. Plus, the stale bread cubes soaked in a sour vinaigrette make it a satisfying and full dish.
Ingredients: 2 cups of smoked chicken, shredded. 1 cup of chorizo sausage, sliced. 4 cups of stale bread cubes. 2 cups of cherry tomatoes, halved. 1 red onion, thinly sliced. 1 cucumber, diced. 1/2 cup of fresh basil leaves, torn. 1/4 cup of red wine vinegar. 1/4 cup of extra-virgin olive oil. Salt and pepper to taste.
Instructions: In a large mixing bowl, combine the smoked chicken, chorizo sausage, stale bread cubes, cherry tomatoes, red onion, cucumber, and torn basil leaves. In a small bowl, whisk together the red wine vinegar and extra-virgin olive oil to make the dressing. Season with salt and pepper to taste. Pour the dressing over the salad ingredients and toss everything together until well coated. Let the salad sit for about 15 minutes to allow the flavors to meld and the bread to soak up the dressing. Serve the Smoked Chicken and Chorizo Panzanella salad, garnished with extra basil leaves if desired. Enjoy your delicious and flavorful salad!
