Bean and zucchini burgers are tasty and good for you, and this one has a spicy mayo sauce on top. Great for vegetarians and burger fans!
Ingredients: 1 can 15 oz black beans, drained and rinsed. 1 medium zucchini, grated and squeezed dry. 1/2 cup breadcrumbs. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1/4 cup chopped fresh cilantro. 1 teaspoon cumin. 1/2 teaspoon chili powder. Salt and pepper to taste. 4 burger buns. Lettuce, tomato, and your choice of toppings. 4 slices of cheese optional. 1/4 cup mayonnaise. 1 tablespoon sriracha sauce.
Instructions: In a large bowl, mash the black beans with a fork or potato masher. Add grated zucchini, breadcrumbs, chopped onion, minced garlic, cilantro, cumin, chili powder, salt, and pepper to the mashed beans. Mix until well combined. Divide the mixture into 4 equal portions and shape them into burger patties. Preheat a grill or stovetop pan over medium heat and lightly oil it. Cook the burger patties for about 4-5 minutes on each side, or until they are browned and cooked through. Add a slice of cheese if using on top of each patty during the last minute of cooking, and cover to melt. While the burgers are cooking, mix mayonnaise and sriracha sauce in a small bowl to create a spicy mayo sauce. Toast the burger buns on the grill or in a toaster until they are lightly browned. Assemble the burgers by spreading spicy mayo sauce on the bottom bun, placing the cooked patty on top, and adding lettuce, tomato, and any other toppings you desire. Top with the other half of the bun, and your Bean and Zucchini Burger is ready to serve!
