You know sometimes when you just don't know what to have for tea so your raid the cupboard and the fridge and throw together whatever you find? Well tonight was one of those times! I had some minced beef that needed using, some potatoes and shallots. So here's what I did. I made a mincemeat curry with fried curried dumplings. I took one table spoon of ghee and melted it in a pot. Took some curry spices, cumin, tarragon, garlic, curry powder, garam masala and ginger. All dried spices and added them to the ghee to lightly fry. I then added some chopped potatoes with the skin in and mixed them in with the spices along with the shallots. To that I added my mince meat and seasoned with salt and pepper. I then added about a pint of veg stock and added a cinnamon stick, cardamom seeds and a star anise. I Let that cook until the potatoes softened. I only used a teaspoon of each spice and let them all cook through. You can add more spice if you wish? It just depends on how hot you like your curry? This is not a recipe as such it was a trial and error culinary experiment which I am glad to say paid off! For the fried dumplings I just took the dried spices used in the curry and added them to some self raising flower and water to form a dough. Mould them into dumplings and lightly fry until golden and crispy.
