I SO WANNA TRY THIS!! @Regrann from @sweetearthchild - The tropical thunderstorm this lazy Sunday evening is making me crave our #brunchbandits #bynithiya vegan laksa all over again! We fine-tuned this bowl of goodness to fragrant perfection over the #mostlyveggies pop up early last year at #nóngathortpark and it managed to even caused some serious meat eaters to rave. I make the laksa paste from scratch using healing Asian superfoods, fresh wild tumeric, 3 types of ginger, bird eye 🌶, local fragrant herbs, before adding homemade stock and freshly squeezed coconut milk. We should milk the benefits of living in the tropics right with the heavy humidity 😜. The rich, luscious broth is poured over 7 types of raw vegetables including spiralised zucchini noodles to make a lovely, yummy nourishing hot salad. We will be bringing it back for our nutritious world flavour lunch sets and workshops on how to farm to table Singapore style.
