Aunty KK asked what I wanted for lunch. I said whatever she’s cooking for herself, which turned out to be Buddhist-style Vegetarian Noodles. There were no “black vegetables” - garlic, onion or ginger. How she can achieve such awesome flavours without these staples has always been a wonder. When pressed, she says it’s just soya sauce and mushroom extract and stir fry wok “kang hoo”. In the noodles were: tofu, shiitake mushroom, bok choy and seasonal vegetables. A Buddhist delight!
