A popular type of sushi roll, the California Roll has crab, avocado, and cucumber inside it. Making them at home is not only more fun, but it also saves you money compared to eating out.
Ingredients: 1 cup sushi rice. 1 1/4 cups water. 3 tablespoons rice vinegar. 1 tablespoon sugar. 1/2 teaspoon salt. 4 sheets nori seaweed. 1/2 cucumber, peeled, seeded, and cut into matchsticks. 1 avocado, thinly sliced. 8 imitation crab sticks. Soy sauce, for serving. Pickled ginger, for serving. Wasabi, for serving.
Instructions: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the water is absorbed. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooked rice. Place a sheet of nori on a bamboo sushi mat. Wet your hands and spread about 1/4 of the rice evenly over the nori, leaving a 1-inch border at the top edge. Arrange cucumber, avocado, and crab sticks along the center of the rice. Roll the sushi tightly using the bamboo mat, sealing the edge with a little water. Repeat with the remaining ingredients. Slice each roll into 6 pieces using a sharp knife. Serve with soy sauce, pickled ginger, and wasabi.
